Rob's Story
This is built like a highball, but with structure.
The tea brings tannin and backbone, keeping the peach from leaning too sweet or soft. It holds everything together so the drink stays bright, but grounded.
Adding the tea after shaking keeps it clean and integrated without overworking it.

Pro Tips
Brew 6 g loose leaf black tea in 5 oz hot water for 4 minutes. Strain and cool before building.
Add tea after shaking — overworking tannins dulls the drink.
Mathilde Peach Liqueur for clean, natural peach profile. Gentleman Jack (or similar soft 80-proof Tennessee) keeps it rounded.
